chicken pasta salad

This is one of our favorite summer dishes and a hit at every pot luck or covered dish supper. You can make it with or without the chicken.

  • 1 box colored spiral pasta and one box macaroni, or two bags of wacky pasta
  • 2 bottles of ranch dressing
  • 1 diced onion
  • diced peppers, any kind you like
  • diced tomatoes, 2 or 3 or how ever much you want
  • 2 chicken leg quarters, boiled or baked and meat taken off bone and diced

Cook your pasta according to the directions. Drain and put in fridge to cool. When cool, in large pot, add all ingredients and stir well.  That is it! Keep cool till you serve. Easy stuff.


  1. Your leg quarters must be quite generous. The ones I can get are quite skimpy and the pasta-to-meat ratio your recipe describes is not quite right for my family that must properly balance carbohydrates with protein. Frugality for my meals cannot mean, “Pile on the pasta; they won’t notice the lack of meat.”
    The flavor combinations are otherwise good. I will give it a try. With enough vegetables, it can be a one-dish meal.

  2. we get the ones in a 10 pound bag at Walmart, they are pretty big, I think usually about 59 cents a pound, sometimes less on special

    There is not serving sizes on these big recipes. How many do they serve?

  4. usually 8-12, although some of the crowd sized can feed up to 20, we live on a farm, and though my children are lean they are big eaters, there are usually 10 at my table
