Guess what we got yesterday? Yep, shredded coconut! And boy is it good! Since pineapples are on sale for 99 cents at Aldis we got 4 of them and bananas are on sale for 33 cents a pound at Wal Mart so we got several bunches of them. And now we are having a tropical party! To the blender we added some
- fresh pineapple chunks,
- a couple bananas,
- a bit of spring water,
- a couple spoons of natural sugar
- and a spoon or two of wheat germ,
and whipped it up! Then added
- several spoons of Tropical Traditions shredded coconut
and whipped for an additional few seconds. And WOW! This is wonderful! Can’t wait to try more recipes!

We did this for Moriah’s birthday and mine. Chocolate cake with choc chips added to the batter. Cooked in a bundt pan. We filled the middle with strawberries that had been cut and marinated with a cup of natural sugar. Then we put strawberries all around the outside. Then we drizzled strawberry and choc sauce on top, and added whipped cream. Absolutely incredible and has become a family favorite.

This was my special birthday cake creation for Hannah yesterday. It is a Brownie – Ice Cream – Banana Split – Chocolate Sunday Cake. We took a 13×9 baking dish and made a batch of brownies then set it to cool. When cool we layered it with peanut butter ice cream sandwiches, then we spread on an entire large container of cool whip.
We took it out and added a nice all over drizzle of very rich chocolate sauce. Then another layer of sliced pineapple rings (fresh pineapple is currently 99cents at Aldi’s) and banana slices. We also added fresh sliced strawberries and then chopped nuts. Then we topped with maraschino cherries. It was definitely one of a kind and everyone loved it!

- 3/4 cup peanut butter
- 3/4 cup butter
- 2 eggs beaten

On cookie sheet form balls and bake at 350 degrees for 10- 15 mins until almost done. If you take them out before they look all the way done they will stay soft. If you like them harder then cook till firm.

These Cinnamon Rolls are neither budget nor low-cal, but they are worth every bite

I do believe there will be chocolate in Heaven
- 1 pkg. (12 oz) semi sweet chocolate chips ( if you have a save a lot near you, there’s are best $1.49)
- 1 1/2 cups sugar, we use raw sugar
- 1 cup butter softened
- 2 tsp. vanilla
- 2 eggs (blended well in blender)
- 2 cups all purpose flour
- 1/3 cup baking cocoa powder
- 1 tsp. baking soda
- 1/2 tsp. salt
Preheat oven to 350 degrees. Mix and beat sugar, butter and vanilla, with a wisk, then add in blended eggs. Then add in remaining ingredients and mix with hands. Yes hands in dough are good. Then taking small handfuls of dough shape into balls and place on ungreased cookie sheets, about 2 inches apart. Bake about 10 minutes or until set. They should look like they are going to crack on top. If you use the raw sugar they will look kind of sparkly as ours do. Don’t forget to bless the cook.
